Pulling a Katie...
Decided to start doing a weekly trip to the grocery store after church to get all my fruits and veggies and cut them up on Sunday to use through out the week like Katie does.
Last week I did potatoes, sweet potatoes, and yellow sqaush, baked it and stored it in the fridge to use as sides through out the week. It worked really well. For the fruit, I cut up strawberries, apples, pears, white peaches, and bananas and made individual servings to take daily to work.
This week I did the same fruits and then for the veggies I cooked up the squash, peppers, and asparagus to use as a side for pork loins and then I cut up mushrooms, peppers, and asparagus to use in omelets (inspired by Matt Miller!).
There is NO DOUBT that cutting stuff up ahead of time helps me eat better. I love just coming home and having it all done because during the week, I have no motivation to do that.

Heather, it sounds like you are definitely on the right eating track. I was glad to see that you added in some of the green veggies, as the potato ones are starchy and might impede your weight-loss goals if eaten too many of them...but even so, they are so much better than potatoes fixed by frying, or even worse, bought at McD. So congrats on getting into that habit of fixing ahead. It sure makes it easier to put together a healthy supper.
