Cauliflower-Potato-Carrot Soup
Place half a head of cauliflower florets into a glass casserole dish. Sprinkle with a few red pepper flakes. Add 1/2 cup water. Then cook the cauliflower in the microwave for maybe 5 minutes. Put water in the kettle to boil. Microwave a medium sized red potato when cauliflower is done.
Meanwhile add the following into the Vitamix:
7 or 8 baby carrots
garlic (clove, freeze dried or powdered)
A few good sized chunks of sweet onion
Add boiling water to 3 cup mark. Process and chop. Add cauliflower and liquid. Run on high for about 5 minutes. Roughly chop the potato and add. Toss in 1/4 cup of shredded cheese. Process on about speed 5 for a minute or less, depending if you want the soup to be chunky or completely creamy. Mine was creamy, but with a few flecks of the red skin.
Pour into bowl and add sea salt, black pepper and some croutons. Makes a really thick and creamy soup. I had intended to add cilantro as well, but forgot. A few springs on top would look nice! This had a little more "substance" to it because of the potato and cheese shreds. But you can eat a lot of it without the guilt of a high fat cream soup.
