Vitamix "Chili"

This is the third soup recipe in the Vitamix in 24 hours! This one is very similar to the Tortilla Soup recipe. It did have cheese added to the mixture for a bit more richness. Very delicious!

Boil a small amount of water in the kettle.

Cook about 1 cup frozen corn in small pan (or microwave it).

In the Vitamix, place:

1 can (14.5 oz.) Hunts Fire-Roasted Diced tomatoes I have decided I prefer regular diced tomatoes for any kind of chili
12 baby carrots
A few chunks of sweet onion
1/2 cup frozen diced green pepper (or fresh)
A few springs of cilantro
One shake of red pepper flakes
1 clove garlic
Cumin and chili powder

Add boiling water to the 3 cup line. Start at a slow speed to chop the veggies, and then rev up to high  and process for 5 minutes at high speed.

Add 1/8 to 1/4 cup shredded cheese. (I used Kraft Mexican Queso Quesadilla.) Process at a low speed for 30 seconds. Add the drained corn and 1/2 cup black beans. Process at a low speed for about 30 seconds (you want these ingredients to remain chunky). Serve with a bit more cheese sprinkled on top. Makes two generous servings.
