Tortilla Soup in VitaMix




So I used my VitaMix for soup...for the first time, and it was a winner.

Here are the ingredients I used that became pulverized into a creamy soup:

About 15 baby carrots
1 clove garlic
1/2 sweet onion
A cup of sauteed leftover charred peppers and onions
1/2 cup leftover green beans from lunch
A small tomato that Connie gave me
An even smaller tomato from my garden
About 10 cherry tomatoes from the store
Cumin, chili powder and garlic powder
Boiling water up to the 4 cup mark

Once the soup is steaming, add the following items, and blend on low till chopped:

1 cup frozen corn that has been cooked
2/3 cup  of canned black beans, or any beans

Add sea salt, black pepper and a sprinkling of cheese to each bowl of soup. This soup is very creamy, but definitely light...no oil of any kind in the soup, except for cheese on top which can be omitted. You could use any vegetables as there is NO way that any vegetable is left intact at that high speed! Crushed tortilla chips would also be delicious on this, but I resisted.
