
Here is a link to a yummy soup I made last night:
I doubled the batch and we have a large amount for the week.
It is quite healthy and (with my changes) is vegetarian.
Here is what I changed:
I added one chopped and seeded red pepper and 1 seeded and minced jalapeno pepper. I added some powdered curry. I used water instead of chicken broth. I omitted the rice and I also omitted the dried thyme since I didn't have any on hand. I added a squeeze of lime.
Like some reviewers, prior to adding the peanut butter, salsa, and lime, I pureed the soup carefully with a hand blender...I left some lumps for texture.

ReplyDeleteMOM - yes, I just figured it would be a little less white carbs...but it only called for a small amount anyway.
ReplyDeleteHeather - it reminds me of that, but it is heavier on the vegetables, and has less sugar (I think only natural sugar in the veggies/sweet potatos and then some in the organic peanut butter, whereas the other includes brown sugar if I remember correctly, as well as cocount milk I think, and more peanut butter)
